One of the best Barbecue books ever. Busts a lot of the myths (resting meat, more smoke is better, pink pork is unsafe, etc) and explains the science behind the cook. Science! Is this the guy that was on WGN morning show saying that beer can chicken is a stupid way to cook chicken because the beer absorbs all the heat and doesn't cook the inside of the bird right? I think it is. Did a little testing on this and he's right. |

His website may even be better than the book. Full of good stuff. Even a great pitmaster like moi learns a lot there. I have even mastered 3 hour low and slow ribs on my little Smokey Joe which travels in front of the passenger seat in my truck when on the road camping.
