Another nice thing for sandwiches, especially paninis is the pesto mayo. I do it simple by mixing 1 part pesto (out of a jar - I use the Roland brand you can find in most markets) with 2 parts mayo or miracle whip, depending on you roll.

If you're a pesto lover, try making your own. It's a five minute job. If you don't grow your own, check out Caputos (convenient to you in the western burbs) which, unlike most markets, doesn't rip you off for fresh herbs. They sell a nice sized bunch of fresh basil -- plenty for a batch of pesto and other things -- for 1.99. Mix a hearty dose of basil, a small handful of pinenuts, 1/4 cup or so of parmesan cheese and 1/4 cup of olive oil (or so to the desired texture) in a food processor. It's easy and sooo much better than the processed kind. Besides, what kind of chef doesn't want to have fresh basil around?

C_Howitt_Fealz - I was using my high speed internet connection and your avatar stuck on Kermit spanking a bunny while the animated .gif was playing. Needless to say, the kids were confused.
