Todays conversation about Mushrooms, specifically Morels, caught my attention and not because I attended the Univerdity of Arizona, but due to the culinary nature of the 'shrooms.

Mac stated he is a big mushroom guy, and started talking Morels. I had Morels once in Vegas at RM (Great high end seafood place at Mandalay Bay) Some Clarified butter and smoked salt is how they made them. BY FAR, best I ever had.

Then a few years ago, my job for Turkey Day was to make a side dish, so I got over to Whole Foods, walked around and see the MORELS! I start loading up the bag, as I need enough for 8 people and as we all know Whole Foods, eveything is 25% more, I decide to check out the price as I just grabbed about 5 pounds. $42.99 a pound! I put them down and walked over to the potatoes.

Buy them dried, they are slightly more economical and their flavor is more intense. I prefer them to the overrated truffles. Shiitake or Chanterelles are good substitues. Mushrooms are second only to bacon in the Spaulding household.

Good call, Spaulding!
Morels are one of the few products
where the freeze-dried version rivals the fresh one.

Where I go turkey hunting, there's Morells all over the place. Plenty of dead elms out there.
we hunt til noon, then gp out with a shroom stick. We usually come away with 10-15 lbs of the stuff.
And I hate mushrooms. I always give mine away.

Fine, I'll bring you some next time I go out, usually mid April. 4th or 5th season.
These things look like little brains growing in the woods. Why the hell anyone wants to eat one of these things is beyond me.

Mushrooms are disgusting. Makes me wonder who the first person was to say, "Look at that smelly, odd-looking, parasitical plant. I'm going to eat it."

Mushrooms are the greatest non-meat-product topping for a pizza (not including cheese or sauce).

You know what else are great, breaded mushrooms. Especially the ones from "my guy" at Brown's Chicken.

I can't stand mushrooms though. It's a pain in the ass having to pick the damn things out of certain dishes that I eat.
