Not likely as this is my first attempt. But today begins the process of eventually making chili better than you.

I bought spices I've never even heard of before. I have no idea of ingredient ratios. I'm going to use the term 'to taste' liberally.

May I suggest a pre made mix, add it to some browned Ground chuck. And from there start adding until you have an idea.

Its chili, its not like trying cereals, if you dont like one, you dump it and try another.

GREAT Chili takes hours to blend all flavors, or even overnight

And nah...I went balls deep with this recipe...which is a combination of about 3 different recipes I found online. Homemade chili isn't homemade if it uses a packet. I think I'll be able to taste individual flavors enough to sort of tweak it going forward. the cumin and cayenne I'm worried about. Too much cumin could be overpowering. Too little cayenne and it won't have any kick. We'll see.

I went with:

2 pounds ground beef
2 cans (16 oz each) red beans. apparently you have to drain and rinse beans - I did this.
24 oz basic Hunts tomato sauce
1 16 oz can of diced tomatoes. i drained these.
about 4 tsp ground cumin
2 tsp red pepper flakes
1 tsp cayenne
2 tsp oregano
3 garlic cloves
I didn't measure this... maybe 4 tsp of onion power
I also didn't measure this... a bunch of cracked black pepper
3 tsp salt
1 tsp paprika

That sounds pretty good but am I correct in understanding that you are against the use of chili powder for chili?

When I've done similar to that recipe, I have used chili powder in addition to that stuff.

When I've done similar to that recipe, I have used chili powder in addition to that stuff.

Chili powder, from what I read, is a combination of ingredients listed above; salt, cumin, garlic powder and oregano. I took care of all those in the above recipe. I think chili powder is just a shortcut spice, no? I looked at the bottle of McCormick's at Mariano's, and ingredients were "chili powder." Very helpful.

Getting the spice combination down that you like is what makes your chili yours. A spice packet is pre-made chili with more work. In my opinion - again, I'm not going to pretend I'm a chef.

Using canned diced tomatoes seems pretty common for chili recipes. To be honest, I was iffy on even putting any chunks of tomato in there. I don't want a salad. :)

It depends which one you buy, but chili powder should be mostly ground chilis which will give it a different taste.

Man - I don't know. Out of all the various recipes I saw, only one or two had "chili powder" in there, and those were usually the simpler recipes with less total ingredients.

Maybe I'll try it next time. It tastes pretty good for a first try (it was my breakfast, I also brought some for lunch). The heat is spot on...the thickness is good, everything is nice and tender. I feel like there could be more of an "initial taste" when you first take a bite, but when it goes down it is good.

Made chili over the weekend with mild italian sausage instead of ground beef or turkey. It was good.

Doesn't everybody make "chili" without "chili powder"?
Sometimes I make a grilled cheese without cheese, I just use milk and vinegar and salt and mix them together.

Eh - I've had chili that wasn't simmering or cooking long enough. The beans are too firm, the meat is too crumbly.

I'll eat it, but beans in chili always seem to take away from it for me. Everything else seems to mix together, but the beans are just kind of there.

Texas chili bans beans.

Less beans, more meat.

A little, maybe half a tsp. It cuts down the acidity or harshness if the flavor is bitter.
