My favorite way to make a grilled cheese is to first fry bacon in a pan and then eat it. It really cuts down on the carbs from all of that bread and cheese.

If you do cheddar you can melt it in the nonstick pan and then put the melted cheese on the bread and cook the buttered bread till it's browned before or after you add the cheese.

I went to that Melt place from Man vs Food. It was pretty awesome. I think I had a Chedder, Chorizo, Bacon and Blue cheese grilled cheese on huge ass texas toast style bread.
