Does anyone really prefer their burger smashed on a hot griddle, well done, with that crispy crusty crap around the edges?

Steak and Shake, Culver's, other similar rural fast food joints...I kinda get it. Trendy, hipster burger bars? Not so much.

I ask because I ate at DMK Burger Bar yesterday. Nice concept, great drinks, excellent fries, sauces and toppings top notch. Then you get this well-done smashed burger pattie...wtf. I like my burger juicy, rare or medium rare. I definitely don't want a Steak n Shake burger.

Burgers are different than steaks, which are cooked medium rare to medium ONLY to preserve tenderness. Burgers should be well-done with a nice exterior crust. Browned meat is more flavorful than red meat. Burgers can (and should be) be tender even cooked well-done.

Yeah, there are places that specialize in one type or the other( pub or griddle,) and there are good and bad versions of both. The only place off the top of my head that does both is Edzo's, and their pub burger is just bad.

First off, I want Sam's opinion.

Mine is that the cheaper the burger, the thinner/smashed the patties should be.

I grew up with Hackney's on Harms before the burger size and quality started slipping in the 90s. That's the top style. It's also the appropriate style for a Merkt's style burger like Paradise Pup or Poochie's. I want these burgers medium rare, as I want the juiciness interacting with the cheese and onions.

But chain burgers should follow the bottom style, and be cooked closer to medium-well than medium-rare.

I agree with Chetcoat. There's a time and a place for both. But I think Culver's burgers are a little expensive for what they are. I don't know, I haven't ordered actual food from a Culver's in about three years.

Both are way over-cooked, what's the point of eating dried out, over-cooked hockey pucks. That's like going to a sushi place and ordering tempura. Rare should be cool purple in the middle. Bottom bun a murder scene of gooey fake blood infused bread. Raw onion for sure, maybe mustard, maybe a tomato slice. Fuck lettuce. Guac burgers are awesome. No need for any other condiment on a guacamole burger other than guac. People put too much shit on / in their food nowadays. How can you enjoy a burger after biting through 7 layers of salad/bacon/cheese fries/onion rings/egg. I blame Starbuck's and their frou-frou drink menu normalizing unappetizing complexity in food-stuffs.

If you want steak eat steak. Burger beef is ground for a reason.
