My non doug - from evergreen park friend went today... here were the pairings:

Ommegang Witte paired with local Irish bacon -- Spiced Belgian Ale goes great with unsmoked back bacon.
Brickstone APA paired with pepper bacon -- Citrusy ale from Bourbonais is perfect to put out the fire from the pepper bacon.
Broken Window Zmickel with local Danish bacon -- crisp hoppy loger with double smoked pork belly
Spaten Oktoberfest with country smoked jowl bacon -- malty festbeer goes well with pigs face
Stone Smoked Porter with brown sugar bacon -- the dessert bacon with rich, dark porter
