Never had any interest in trying them, but I had some Tilapia filets sitting around so I gave it a try. Had the filet, chipolte salsa, cumin, sour cream and cheese. Not bad, but not spectacular. Did I do this wrong?

You put cheese on a fish taco?? That's disgusting. No cilantro, onions or cabbage? A simple google search would've revealed some good recipes and the proper way to prepare them.

Sounds like you basically made a normal taco and substituted fish for ground beef/chicken. That's not how fish tacos are done.

I just thought they were tacos with fish. Cabbage sounds good actually...

Pains me to say it but shakes is right. And cilantro is an essential part of a fish taco.

Fish tacos are a lot lighter than a normal taco. Whether the fish is fried or not, it usually comes topped with some sort of cabbage slaw, cilantro and a light creme sauce that often has avocado in it. That's pretty much it. Next time you are at a good restaurant that serves them you should give them a try, when they are good they are really good.

I really like the ones at Mixteco at Montrose and Damen (might be Ashland).

When it comes to fish tacos, you can almost never go wrong by employing Colonel Angus.

To get to your place, I would literally need to plan a two-week roadtrip from my house.

fish tacos are such a tricky thing, lots of places have them now that have no business serving them
to wit: Beer Bistro, nastiest shit ever

Chuck's makes a solid one

Either way, fish tacos look and sound gross.

Just like not all plates are round....not all plates are made of a government issued compartmentalized plastic mold. :P
some of them are square, ceramic, and have a slight depression to contain the au jus.
