Any and every class taught by Dirk Deam at Iowa State. Dude worked at NASA and then became a lecturer of Political Science. Can't remember exactly how that change in careers happened but he was the most engaging teacher I've ever had.

I was actually thinking about this a few weeks ago and trying to work out the logistics of just poking my head in for a lecture for old times sake.
