Hah, I didn't know you did NMR stuff. My undergrad (as I think we talked about) is in BioChem. I used to do a lot of NMR stuff at UIC. I also worked tons of HPLC and GC/MS machines. They used to make us figure out what all the peaks meant in terms of unknown chemicals. That was the big thing in science labs.

I work right in the lab at the instruments of the 40M lab I am responsible for. We do this if you truly are interested.

Before deciding to go to grad school and while in it, I worked in labs for about three years. I was like Chevy Chase in Vacation, a food scientist. Pretty "interesting" stuff if you like to know what all those chemicals on processed food labels mean. My highlight was getting to eat a lot of Boston Market ham as we were working on new glazes and such.

Thank goodness I went back to school for Finance. Much more fun.

Most of the stuff comes from natural products, like corn or soy beans. They basically use corn to make HFC or soy beans to get out protein flavors. For fruity stuff, they'll extract the oils out of orange peels or the pits of cherries. They use those chemical extracts to make flavor candies and juices. So on balance, the stuff is pretty innocuous. When things are artificially flavored, it merely means they are creating the chemical flavor that we all perceive to be cherry in a lab by mixing other chemicals, but it is the same thing you would find in a real cherry.

The whole science behind the stuff is interesting. I would open up these 40 gallon drums of various chemicals, and they would smell like candies everyone would know, like Bublicious watermelon gum or Banana Laffy Taffy's. It was the oddest thing.
