I've read tons of reviews but still not sure. Would you guys go with the 1 bowl or 2 if you were putting in a new one?

Gotta go 2. You'll wish you did if you only go 1.

Washing dishes with a one-holer is an unnecessary burden that you don't need.

I vote one hole with possibly a little side sink with disposal, adjacent to prep counter for dumping scraps. The main sink needs to be big enough to fit your largest roasting and frying pans. But don't go excessively deep. You just have to bend more.

you'd think two, but one is the answer, unless you live on the south side where two are necessary in order to piss down the drain without having to remove the dishes

one if you have a dishwasher and you like to use it
two if you prefer washing most dishes by hand (because the dishwasher is actually more work)
