Another one I really like, after just seeing the movie for the first time tonight, is imo, the climactic scene in The Guardian.

Senior Chief Ben Randall unretires for a day and goes back to rescue star pupil Jake Fischer in a US Coast Guard rescue mission. As they are being raised together to the helicoptor, it's obvious the cable line is breaking and wont hold both of their weight. Ben Randall tries to save Fischer's life by unhooking himself, and Fischer reaches down and grabs Randall's hand. As Randall is hanging there, Fischer yells down "I wont let go!!" Randall then says "I know" and unstraps his glove, falling down into the ocean. You'd really have to see the movie to understand the significance, but it was a really cool scene.
