I had this government class at UIC where it took a deep dive into other political systems of the world. It was supposed to feature places like Mexico and Japan. But the Eurocentric professor spent the entire semester on the UK and France. I only learned about other systems from reading the Economist for years.


I got little on Egypt beyond what I learned from the first King Tut tour until I went to an HBCU. It often started with a brief discussions of prehistoric man, Iron/Bronze ages then off to months on Greece and Rome.

Virtually my entire 7th grade English class was even dedicated to Greek, Roman and Norse mythology. Then finishing up with a review of Plato, Socrates & Aristotle. As an aside, my mother (a lifelong educator) still gets annoyed that I don't know what an adverb or prepositional phrase is. Or that I had to call on Schoolhouse Rock to remember conjunctions for a test in HS.

I'm not sure where you live, but I tried this place a couple months ago. It's not 100% authentic...which is probably better...but it's really tasty.

Lamb is odd and the taste varies greatly from one lamb to the next, even in related animals (now that was one of the many useless pieces of info from a wasted 3 credits at MSU.)

Good lamb is a fantastic eating experience. Bad lamb is so off putting that if it’s your first experience with it you’ll never go back.

I'd recommend just skipping the LoL completely and go with chops or rack.

Pro-Tip:

For lamb or beef, roasts, chops, steaks of any thickness.

Over season it before you roast or grill it. Whether it's just salt and pepper or something more extravagant, put more on than you would think. Much of it will drip off while cooking anyway. Remember, you're seasoning a hunk of meat that's usually over an inch thick...so only the outside is taking the seasoning.

(Never stab it and shove garlic cloves into it)

Rack is the best imo. I like a good leg but too often they do get over cooked. Lamb, to my tastes at least, is best served rare. Didn’t like it until I went to a feast of some saint in Melrose with my wife and the Italians made some in the grill that was incredible.

You shouldn't try to cook lamb to temperature. Really it should hit 165 degrees, medium well. Do you order your chicken medium?

So, it’s of course anecdotal, but professor ran a research station and said even twins (probably fraternal vs identical) could have a variance in taste from their experience. We have sheep on the farm and I’ve had ones that were gamy as hell and ones that were very mild in taste. Mostly on the mild side even when pushing the lamb/mutton threshold.

Heffy's has new owners. Some of the guys from work go over there, and haven't had the best experience since the change. There is a place on Wolf called The Gyros Factory...the owner is the brother of the guy that used to own Heffy's. Pretty good stuff.
