Not a reboot but a sequel:
Dr Detroit. Great movie could have done a ton of them
Big Trouble in Little China. Great characters. Fantastic world that Jack Burton inhabits, wich leads me to
Buckaroo Banzai. There is a script that was written up on the web. They did a few comic adaptations. Also in the script that is on the web it has a cameo from Mr Jack Burton himself

Remo Williams. I love the books. I actually loved the movie and thought there should have been making them forever like Dr Who.

Princess Bride. Goldman has supposedly been working on a sequel called Buttercups Baby from almost the day the movie was finished.

I really liked Big Trouble in Little China but no sequel was required. Everything gets taken care of and you have to just assume that Jack Burton gets in a crazy knife fight with that huge creature on the back of his truck.
