This is a very structurally unsound combination. Zucchinis are spongy vegetables with a significant amount of water in their cells. Heat treatment leads to disintegration of cell walls and release of this liquid which is certain to cause challenges with cheese adhering to the vegetable. There are some ways to deal with this which range from low heat preliminary dehydration of the vegetable to presalting/pickling to draw out the fluid. But these would be a completely different recipe.
