Cheese is not really my area of expertise. I know probably a little more about it than the average person, and that is as much from reading as it is from tasting. That being said, this place blew mind. Every cheese I have ever heahd of, they had, organized by country of origin, then region, then age. Even the expensive stuff like Machego and Gruyere is hunked off into a decent-sized wedge that you can get for a few bucks. It's a typical outlet store setup, attatched to the factory/warehouse. It sort of feels like a mob front that outperforms its function, like if Genco Olive Oil Importers really took off unexpectedly. I'm sure the Lake Forest store has pairings and classes and wood floors and the like, but the Melrose one has a little bakery/cafe, a decent dry goods selection (though not especiallly cheap), and a shit ton of cheese. I know there products are sold there, but I'm pretty sure they are not affiliated with the Caputo's grocery stores. I would recommend making a trip here If you're even just looking for ideas or something to try. I was very pleasantly suprised. I picked up a a wedge of a sharp provolone, a Sardinian pecorino romano for grating, and a hard Greek cheese called Kefalotyri (if you've had Greek food, you've probably had this.) Each about a half a pound, $2.00-$5.00 each. Also a hot Sopresotta for like $7/lb

Another good place for cheese is Woodmans, but there are only a couple of them, North Aurora & Carpentersville. They have an outstanding liquor store too.
