Through a combination of coincidences that would rival a Three's Company episode, I am hosting Easter this year.

Never hosted a holiday. Never had one at our place when I was a kid either.


I have literally ZERO plan for this.

Cooking for 5 adults and 4 kids.

Im not crazy about Ham.

Was thinking Traditional, but Im not married to it.

Budget: Id like to keep it under $150

I have no idea how much a holiday costs though. That might be way too low or high.

I have a normal kitchen and have friday night and saturday morning to do this

BUT - we use this for several holidays throughout the year, birthdays, 4th of July, etc... Their chicken is ridiculous. They do have some smaller packages (HIYO!) on the last page you could do for under $150. No headache, just cleanup.

IF you want to cook, do brunch. You can do some breakfast stuff in pretty big quantities (eggs, sausage, taters, etc) relatively cheap. You can do roast beef and chicken, rolls butter, veggies, all pretty easily. You could do ham for breakfast too, but I'm not big on ham either. If you're cooking, make something you like. Some of that stuff you can make Fri or Sat then just heat up on Sunday.

So there's that. Or ringdings.

It would be nice to have spaulding on this. She had a couple threads with a ton of decent suggestions. anyway...

Are you a Costco member? I am not, but my dad had gone out there and gotten pre-made main courses (salmon in this case) that came out very good and didn't require any prep. May have something that you can get a couple days in advance and stick in the fridge/freezer and just pop in the oven.

I would suggest to keep it simple unless you are confident in the kitchen. Ham is hard to screw up, so that would have been a nice option. Fresh asparagus is usually tasty and very easy. Scalloped potatoes out of the box are usually good, easy. How are you at pasta dishes? Maybe a lasagna? Buy the desserts.

Any way to do an easter egg hunt, even in the condo? Just a few, and then have a big basket or some such with goodies for the kids as the adults get things set or chat after the meal.

If you can get outside for the easter egg hunt I have always made clues and they have to find their baskets. I used to give Hawg Jr. a egg and it would have a clue where to find the next egg and so on til he found his easter basket. He loved this and even last year I still did it this way

Have them ready when people get there. They can start mingling with drinks, chat, while you can finish up any last minute details in the kitchen. Just some ideas: shrimp ring (always on sale), cheese ball (homemade/deli) cheese cubes, crackers pita chips, hummus (deli!) olives, all kinds of dips ( I can elaborate if you want me to)...Target has some GREAT appetizers under their Archer Farms Brand. I like Nancy's brand mini-quiches and spiral rolls (wrap, meat, cheese, etc...just have to thaw), nuts (gentlemen!!), veggies, i love pizza rolls and bagel bite pizzas...

Then, a salad (a BIG salad)...lettuce mix in big bowl...add ins in separate bowls...get creative!

Then just choose your meat...how you want to cook it...decide on some sides.

Cake for dessert....(who doesn't serve cake?)

I have more thoughts but don't want to bore you.... :lol:

everyone loves an egg bake.
get a bunch of fruit. grapes, strawberries, apples...cut that shit up. maybe some crackers and cheese, sausage...

If you're not going to do ham, italian beef is perfect. Probably need about 15-20 lbs (frozen bucket) to make that work for 5 adults...even more with kids. Jewel has bollilo rolls at 3 for 99 cents.
Everyone loves fried chicken too....Popeye's and KFC usually have bucket deal coupons.
Cook a bag of frozen corn or other veggie bag. or just cut up a bunch of carrots and celery.

Ask someone to make a salad, ask someone else to bring some brownies, cookies, or a cake.

if beer/booze isn't included you should be pretty close to $150.

A brunch must have:

Spray muffin pans (I use disposable :oops: ) with Pam
Circle a piece of pre-cooked bacon or piece of semi-cooked in the pan bacon (guess what I use? :oops: ) in each cup
Break one egg in the center of each cup
Sprinkle (pour :oops: ) shredded cheese on top

Bake at 350 for about 12 - 15 minutes until toothpick comes out dry from center

The egg bakes around the bacon like a hard boiled egg, the cheese...drool!
These are perfect to cook the night before and reheat the next morning.
