This turned out more like a pulled pork with beans but it is pretty amazing and cheap considering the amount of food it yields.

1) Toss two cups of your trusty rinsed dry black beans into a slow cooker.

2) Cover with 5 1/2 - 6 cups of water (you can substitute beer or chicken stock here but water works pretty well)

3) Chop a big white onion, 5-6 cloves of garlic, 3 Serrano peppers, a couple of tablespoons of tomato paste, a can of chilies in adobo sauce, and toss it all into the slow cooker.

4) Add whatever amount of oregano, ground cumin, cayenne pepper, Sriracha sauce you feel is necessary.

5) Pull out your 2-3 pound pork butt roast (I used a 3.5lb roast), salt and pepper generously and brown on all sides in an oiled pan.

6) Add browned pork to the slow cooker, cook on high for 4-5 hours, salt as necessary, and eat.


Note: This is much better after a day of cooking (8-12 hours) so all the pork has time to mingle with everything.

Additional note: this stuff is fantastic with eggs.

Hey, Goggles, I think it's a clafoutis. Don't feel bad though, my girlfriend stayed at a bed & breakfast in Mt. Dora, Florida and the proprietor called it a "calafooty'.
