By these standards I am a heavy drinker (1-3 beers a night, 4-5 beers on weekends) but by Dallas' standards I am an amateur

Agreed. And most beers aren't 5%. Also there is a difference between drinking 3 beers in an hour vs drinking them over a period of 3 or 4 hours.
