Been making this recipe for I think 4 years in a row now and every year its stolen the show at T-giving. My niece calls me up every year to make sure I'm making it again and everyone raves about it.

Here are some pro tips I've figured out over the years of making this dish.

1. Add an extra 6 ounces of bacon.

2. Only use top notch ingredients! I get the bacon from Paulina meat market. I only use the best parmesan reggiano (sp) and aged white cheddar. Granted I end up spending around $80 for all the ingredients when its all said and done, but if you only make it once a year why not?

3. Don't over cook the pasta. Very al dente because it will cook further once its in the casserole dish.

4. Own a dishwasher. Very intensive recipe, I end up using just about every pan in the house it seems. Between prep and cook this could take 4-5 hours to make so give yourself enough time. I like to prep everything the night before and then put it altogeher the day of and then throw it in the oven at my parent's house when I arrive.

If I wasn't such an upstanding honest member of society I would've gotten most of it for free this year. Just got done doing the shopping at Mariano's during lunch, picked up most of the stuff I need for the recipe. Waiting for the cashier to finish ringing me up, i noticed that the screen to swipe my card was stalled and there was a message to wait for the cashier. So she finishes ringing up all my stuff and then hands me a receipt for $102 and says thanks. I inform her that I never swiped my card so how am I already getting a receipt? Turns out she never closed out the people in front of me so everything I bought got charged to their card on top of the $60 worth of stuff they had purchased. Ended up having to void everything and redo all my stuff which left me with a $44 tab.

I won't argue the part about spending $80, but I think I'm gonna have to take issue with the LC comment. Unless its not a good idea to get a free all expenses month long sailboat trip the Carribean and then follow that up by being on a tv show and then having a solid 2 year long 15 minutes of fame complete with groupies and heavy partying???

Hey, it may not have been MASH or CSI, but the drunk sluts at Barleycorns didn't seem to mind.

It came out to about $60-65 this year, had a few things already and managed to stream line some of the other purchases and save a few bucks.

It costs a lot, but for me it worth it. Only dish I make for the event so no big deal to put that much effort into one dish. The responses from my family make it all worthwhile. Our extended family broke in half yesterday and one of my cousins was upset to find out my mac n cheese wouldn't be making an appearance at the other house. My niece told me that it was her favorite mac n cheese she ever had.


This year we only had 12 at my mom's house and 3 of those are small children so I ended up with a lot of leftovers, always happy about that.
