Ground pork and/or beef for chili. Turkey is acceptable as well. Make gumbo if you want to use sausage.

Trying dropping a couple of Hershey's Kisses into the stockpot time you try chili. I forgot who mentioned that here, but I read it here somewhere and tried it out last year. It was awesome.
