Apparently in Philly, it's acceptable to put ketchup on a Philly steak sandwich. I mocked them and then a guy offered to buy my sandwich if I put ketchup on it so I took him up on the offer. Wasn't bad.

I wouldn't put it on an Italian beef though.

We had that. Steakums with a pile of shredded cheese on it.

It was called Cheesy Beef.

And we still knew enough not to put Ketchup on it.

Beef should be ordered wet, which leaves no ability for ketchup to stick to the sandwich. Garnish is hot and sweet, whose oils make the sandwich even more slippery for condiments.

I can see someone doing that out here in the hinterlands. I'm not a big Italian beef fan but I think it's because my uncle and aunt always got them for their grandkids parties or Christmas or whatever and they were always dry.
