Any of you have any recipes or go-to tips regarding layers or anything like that? The one recommended to me so far is this:

Quote:
Ingredients
1/2 lb beef
1/2 lb pork
1 tbsp each: oregano, basil, rosemary (or 3 tbsp of an Italian blend of herbs)
1/2 yellow onion chopped
4 garlic cloves chopped, divided
9 lasagna noodles boiled al dente
2 cans of your favorite marinara sauce (roughly 48 oz)
1 16 oz container ricotta
4 tbsp pesto
1 egg
1/2 cup parmesan shredded
4-5 cups mozzarella shredded (or a blend of Italian white cheeses)

Instructions

About an hour before cooking, spread out ricotta on a plate and place a couple paper towels over it to soak up some of the moisture.
Preheat oven to 375.
Prepare lasagna noodles according to package directions.
In a skillet crumble and cook beef, pork, onion, herbs, and 2 diced garlic cloves.
While beef is cooking, add 2 cans of marinara sauce to a large sauce pan and warm up.
After beef and pork is cooked through add to marinara sauce, do not drain.
Simmer until you are ready to assemble lasagna.
In a bowl mix ricotta, egg, pesto, 2 diced garlic cloves, and parmesan cheese.
Now it's time to layer your lasagna!
In a 9x13 pan, spread a thin layer of sauce.
Next lay out your first layer of noodles and cover with meat sauce.
Add a generous layer of mozzarella.
Then another layer of noodles topped with the ricotta blend.
Sprinkle with more mozzerella.
One more layer of noodles and add the rest of the sauce... and don't put the last cheese layer on yet! You heard me! You are going to cook the lasagna without the epic top cheese layer first!! Cover it with foil, cut a few vents and bake for 30 minutes.
Take the pan out and remove the foil.
Now put on that epic last layer of mozzerella cheese! I like to add a little garlic salt and parmesan to the top for extra flavor.
Bake for another 20-30 minutes until cheese is browned and bubbly.

Make your own sauce. Homemade sauce is infinitely better than anything store-bought.

I was told to do this when sent this recipe, honestly.

But then I have italians whispering in my ear that half the time they use a store bought 'red gravy' and then add some vegetables and spices and call it a day.

Lasagna is tricky, IMU... put too much sauce on and it can be loose and messy, not enough and you get a dry crusty result. The key is just the right amount of meat, cheese and sauce evenly and proportionately.

A couple of tips... after you put the initial sauce on the bottom of the pan, drizzle some olive oil over it before putting on the first layer of noodles. Each layer of noodles should be placed in the opposite direction to assist the stability of the finished product. Nothing is worse than a big glop of flattened noodles, meat, sauce and cheese. Good luck!

Last night I bought the goodies...tonight is the night.

If this works out, I'll be able to make it for the dates Darkside says I don't have. He'll have to pay better attention to my various social media accounts!

As for the noodles, no need to boil them. I find it's easier to just soak them laying flat in a dish.

Probably mentioned already but great care must be taken to make sure it does not end up soupy. Drain water from ricotta really well and easy on the sauce.

I caved. I can't always take the high road, after all.

It turned out excellent, but a couple of things happened. (BTW: PM, I did drain much of the water from the ricotta by spreading it out and soaking up moisture with paper towels for about an hour. It was recommended by a few people and it seemed to work)

• The bottom layer wasn't as attached to the top two layers. Not that it wasn't at all attached, but it seemed more slippery. There might have been too much sauce and not enough mozzarella on this layer.

• I needed more than 9 lasagna noodles. My pan must be slightly different dimensions than 9" x 13". On my middle layer and top later, the noodles didn't quite cover 100% of the surface area.

The taste was fantastic. Right amount of meat versus ricotta / parmesan spread, but I might have overdone the mozzarella on the top.

I used to love Lasagna. Then my wife got lazy and just started buying that cheap frozen Stoffer's shit instead of making it homemade. Now I am ruined on Lasanga entirely.

My wife tried to get cute with it and ruined it. She started trying to use these fancy cheeses and homemade chunky tomato sauce. It was bad. Lasagna is too hard to get cute with if you don't know what you're doing. Get some good store bought sauce, ricotta, mozzarella, ground beef, and noodles and you can't go wrong.

I should make lasagna more often (or ever) as I hate my wife's version of it. Was one of my favorite dishes growing up,especially leftovers but not this abomination my wife makes.
