goat cheese/ provolone/ parm/fontina. maybe feta. That would take you in a Greek direction though.

If you go with provolone or parm you could throw olives on it too.

I just looked at your menu...you could put garlic or parm pita chips on a spinach artichoke dip one, kinda like the one with fritos.

I cannot tell you how much fun this is. Looking at all the recipes I have, cross referencing. I really really wish I could go back 20 years and start a career with food. At the same time I don't because I wouldn't have the rest of my life...I wish I could add it to now somehow. Maybe I will, I just have to figure it out. You are just so lucky. This has to be so much fun. Sometimes it's what I do for entertainment. Pick a thing to make make different versions have family and friends vote on it.

Stay away from pesto. Basil is too verdant, it's overwhelming for a burger. Compliments the blandness of chicken breast.

Keep it simple. Cheeseburger w/ two slices of charp cheddar, hickory BBQ sauce on bottom, creamy buttermilk ranch on top, thick sliced RED onions, tomato, pickle, lettuce etc. (as bigfan would say RUNNING IT THROUGH THE GARDEN). Simple but delicious.

Since it is for February, it has to be red, so I would start with red sauce and make a heart-shaped Ravioli Burger.

Cut four pieces of heart-shaped pasta, or whatever medium you want to make the ravioli out of. Use mozz cheese, ricotta, garlic, and some olive oil for the ravioli filling, in between two ravioli's, you place a burger with artichokes, black olives, red sauce, oregano, and parmesan cheese. Put some shredded lettuce or spinach in there to add some fiber and VOILA!

If you REALLY want to be fancy, after you assemble the whole thing, dip it in batter/breading, and seal the whole thing in a breading - BREADED heart-shaped ravioli burger!

I like some of this but it sounds hard to eat. I'm going to save the red sauce for a meatball burger down the road.

Ive made meatloaf a couple times. Nothing special to it other than onions but it's good.


Then I occassionally get lazy and buy the Stouffers ones, which are actually pretty good.
