I don't think you are taking this seriously. Faith isn't something you rationalize. If you have a gluten reaction after communion then it's evidence that the Catholic doctrine is wrong. Doesn't mean you set the church on fire. Just means this little part of doctrine is likely to be consubstantiation, which is still pretty damn close.

It just means you aren't clear on what matter makes up the substance of Holy Communion.
