I've heard several stories about Chicago BBQ Ribs.

Story has it they originated from Kansas City and adopted in Chicago. Is that true? I sure for know they didnt originate from those shitty fall of the bone st.louis ribs. fucking disgusting how people can call that ribs.

Personally love a good old chicago baby back cooked right and has that bit of toughness when biting off the bone.

The pork ribs definitely originated in the Old World and were brought over to the New World by Spanish Explorers. Columbus himself brought over a dozen pigs over on one of his journeys to the new world. Best ribs to me and almost all steaks I have ever eaten is in Kansas City. Can't beat Midwest production of Beef and Pork.

The real Chicago Style ribs are mostly known for the Aquarium style smoker from many South Side Rib joints which I believe is unique to Chicago and not anywhere else.

More and more I prefer chicken, pulled pork or brisket (if they have a good brisket) when I go places. Too many ribs I haven’t liked or that are just to damn sloppy. Even at go,e I’m more likely to do a shoulder or a belly these days although smoking a chicken right now.

Great ribs are life changing. Very good ribs are better then getting the chicken. Other ribs are just not worth the effort, get something else on the menu.

The best ribs I have had:
1. 12 Bones in Asheville NC
2. Joe's Kansas City. Not always, but I caught a perfect batch.
3. Jack Stack's Crown Ribs in KC. Essentially BBQ made with bone in prime rib. You buy them by the bone.

Now, in part because of the aquarium smokers, that's not true for Chicago rib tips. Even just above average rib tips are a good value.

What is meant by "Chicago BBQ Ribs" in the title of this thread? If Chicago has a signature barbecue style it would be the aquarium smoker, wouldn't it? Or is the OP referring to the Gale Street, Twin Anchors type of ribs that aren't real barbecue at all?

I also do them 2-3x a year. Usually when my oldest son comes home. Of course his dog sits right next to me as it cooks, knowing that he'll be getting at least three primo bones.

I don't like ribs. Sometimes I'll eat them if the sauce is great, kind of like buffalo wings from buffalo joes

i'd never had "chicago" style ribs before.

famous daves sauce was on sale at menards so i bought some of the "southside" sauce assuming it had something to do with chicago. a much spicier kc sauce. so i imagine it has KC roots.

we have a place in the QC called jims ribs who has a similar styling. his sauce though is the best kc bbq sauce i've ever had and i've been to gates, aurthur b's, and joes. my only issue is the qc place takes an opposite approach to fall off the bone to the far end. like gnawing on shoe leather. the sauce just happens to make the difference.
