A couple of bone in ribeyes, mushrooms to accompany the lobster mac and cheese I grabbed yesterday. I'll probably only eat half of my steak. Which means that my son's breakfast cheese eggs will come with a side of steak.

And I'll have grilled mushrooms to go with the soup I'll be likely having tomorrow.

Burgers, brats, pizza. A couple of weeks ago I grilled some real thin chicken breast and put them on brioche buns with some cheese. Homemade chicken sandwiches. It was very easy and quite tasty for a change of pace.

Pork shoulder went on the grill about 20 minutes ago. First Coors original of the night cracked. Looks like the rain will hold off for a while. Glorious!

Since I now rarely eat red meat, if I do, I'll splurge on the rare occasion I don't. $40 for the steaks and the lobster mac is from Jewels. I just doctor it up a bit.

So what did you end up grilling Doug?

I made perhaps the best pork roast I have ever made in my life tonight. It was absolutely wonderful and tender, flavorful and juicy. I totally forgot to take a picture before I pulled it off the grill and I'm still kicking myself for that. It was absolutely restaurant quality though. Perfectly succulent and amazing.

It was raining yesterday so I decided to take things indoors and cook some boneless short rib steaks for the wife and kids using the reverse-sear method in the oven and on a cast iron pan. They turned out great, perfectly medium-rare from edge to edge as well as delightfully juicy and tender. As I've said in the past, I highly recommend this method for cooking steaks if you're still using high heat all the way through or are searing first and then putting the steaks in the oven at a low temperature.

My son is a big fan of YouTube star Mr Beast, who has opened a chain of smash burger joints all over the country. They're no brgrbelly, but they're decent for fast food.

We started talking about making our own smash burgers and did a little homework on best cuts, seasoning, patty weight,etc. I ended up watching a video of a guy grinding a whole packer brisket and decided on that for our cut. Went to Heinens and picked out a nice, 2lb piece of flat and talked to the butcher for some pointers. He ground it for us and even gave it to us for a couple week old special price, which amounted to about half off.

I seasoned the meat with salt, pepper and granulated garlic then made 2.6oz balls and put them back in the fridge. We're going to fry them up tonight.

Expecting excellent results.

Was burgers on Friday night. Provolone cheese FTW

Last night was thin chicken breasts for the wife and child, bacon wrapped thighs for me. Also chopped up some broccoli, tossed it with oil and salt & pepper, wrapped in foil and threw that on the grill. Everything turned out marvelous.
