I'm trying to eat more of them. I don't hate them, but man they can get boring to eat. What do you guys to do make them more palatable?

Throw them in a salad and pour some vinaigrette in there. Top it with some dried cranberries to make the salad/veggies sweeter.

Throw veggies in a pan. Sprinkle parmesan cheese and olive oil. Put in oven for 15 minutes.

Yeah, butter and salt make everything taste better, but not the healthiest option. Pan roasting sounds better than steaming.

olive oil, garlic salt, pepper. either in a pan of veggie basket on the grill. we'll do this with zucchini, squash, bell peppers, potato slices, etc...

eating a lot more salads too. trying to do that at least 3x a week.

Get some salt free spice mixes. Trader Joes has a relatively inexpensive one called 21 Seasoning Salute. Penzeys also has several mixes without salt.

I get the bags of steamable corn, I use a little butter and mostly other spices and some Cholula.

I boil a pound of red potatoes, let them cool, then dice them with a little malt vinaigrette with a tsp of dijon-style mustard and a lot of onion. Leave it in the refrigerator covered for 36 hours.

Smaller sweet potatoes baked, scooped out and mixed with cinnamon and a good maple syrup. Works with frozen butternut squash in a pinch.

I use the Indian Style simmer sauces from TJs, Aldi, etc to simmer frozen cauliflower florets. I usually make that when I have Costco rotisserie chicken to finish off.

Whole Foods used to have a really good frozen root vegetables blend that they discontinued with COVID. Roast that type of mix with some smashed leftover overripe tomatoes and a 40 cent can of tomato sauce, throw in some feta for the last ten minutes. That's more of a winter dish.

pan roast broccoli florets that are tossed in olive oil and salt(!) go for about 20 mins at 400 degrees -- some of it will turn black (carcinogens?!) but then take it out, put it back in your mixing bowl and throw some lemon juice, parm, and lots of pepper and then toss and serve. You will like.

Another one I like to do is baby spinach greens in a salad -- you pick a fresh fruit like blueberry or raspberry, some crumbled blue cheese, you can go with onions or nuts or croutons too -- pretty much whatever. Good counterpoint if you are doing a spicy main dish.

Bell peppers, drizzle in an olive oil that has had some garlic marinating in it, place kn grill until the outsides start caramelizing as it will bring the sweetness out.
asparagus..put on foil, put small pieces of butter and diced Harlingen (can replace butter it’s old ice oil) sprinkle a small amount of water on top, close the foil around sprouts, toss on grill. When done place use a balsamic vinaigrette and blue cheese crumblesj can serve chilled or warm (can also bypass the dressing altogether).

Get a good Garlic and Herb dry rub and sprinkle it over it with some olive oil. The grill/bake/pan fry or even steam them. Get a cheap but highly rated rice cooker too as rice goes with pretty much every vegetable besides potatoes.

I've always disliked cauliflower...but if you break it up on a cookie sheet, drizzle some olive oil on it with garlic and sprinkle with crushed red pepper flakes and roast the hell out of them, they are quite tasty

It's more convenient and mine has a steamer tray above it I can throw some carrots in and then mix it in afterwards.
