Sounds good. I’ve never tried that with Ribeyes, only strip steaks. I suppose it would work with any quality and thick cut of meat. Smoked and reverse-seared steak is my families favorite cooking method any more so I might have to give Ribeyes a try.

I'm just doing my family's ribeye cuts but they are thick enough to do it.

But, if you really want to put on a show, go to Costco (they don't always have them) but get the tomahawk ribeyes. They are about 3lbs each and run around $40/per. But, they are about 1.5-2 inches thick and you can slice those up like a roast to feed a lot of people.

Salt them about 30 minutes before putting them on to let that sink in and then add some pepper. Smoke around 225-235 for 45 minutes to an hour. When they get to around 117 degrees, the smoking part is over.

Take them off and brush butter on them with a bit more salt and pepper and then sear them for a few minutes on each side to your liking. A few minutes will bring them to around 135-140 and it is a perfect medium rare with a nice char on them. Super easy.

I've done it with oil too. Butter can make it too salty but I like it that way and my kids do also.

I’ve cycled through bad beers, first Bud Light (awful), then Coors Light, and now Miller Lite. I make no apologies, I like shitty watered down beer. Up here, I go with Spotted Cow, Capitol Amber, and Supper Club among other more well known stuff.

We all have. Mine was Gills "Won't go flat". Literally a place on 47th street that used to sell their own brew in half or full gallon returnable glass bottles. Some guys I grew up with still cling to the bottles they've kept over thirty years.
