Take them off and brush butter on them with a bit more salt and pepper and then sear them for a few minutes on each side to your liking. A few minutes will bring them to around 135-140 and it is a perfect medium rare with a nice char on them. Super easy.

sounds exactly like what we do with 2” thick strip steaks but with olive oil rather than butter. Either way I’m getting hungry.

I've done it with oil too. Butter can make it too salty but I like it that way and my kids do also.

We all have. Mine was Gills "Won't go flat". Literally a place on 47th street that used to sell their own brew in half or full gallon returnable glass bottles. Some guys I grew up with still cling to the bottles they've kept over thirty years.
