Totally agree Jet.

Stubbs has decent stuff, too.
Another good one is Weber Sweet & Spicy

Took a flyer on the Famous Dave's Natural Sweet from Costco. It's really good.

At lunch today chopped and warmed up some of the point off the brisket i smoked Saturday. Added some of that Dave's sauce. It was some of the best burnt ends ive ever had.

Famous Dave's is surprisingly...decent. Solid even.

HUGE fan of their rib rub.

Spany, what the hell are you talking about?

There's some brand of potato chips/corn chips that they sell in St Louis/MO that they don't sell up here.

The brand name escapes me.

I’m appreciative of all the suggestions and genuinely going to try as many of these as I can find. I expected the guy fieri mult to go with an all caps donkey sauce and nuke the thread before it got going.

If anybody is near a city bbq in the burbs, the brush fire sauce is pretty solid for chicken.

Yes, Hawg, the corky’s out of Memphis.

My favorite BBQ place in Memphis.

I started hitting the original Corky's back in the day based on Steve Dahl's love for them (he looked like he would know). I seem to remember him having them shipped in to the studio a few times.

And fwiw (not much anymore I guess) there used to be a Corky's outside of Springfield, IL. On a couple of occasions we were able to pick up some of slabs of ribs on the way back to Chicago. Good stuff.

I would be shocked if it was the same restaurant, they stayed very local forever.

As I noted I’ve been to the original as well as another in the Memphis area. It was definitely the same even though it clearly was a bit of an outlier. I’m not sure how local they are any more...they’ve got 10 restaurants in 4 states currently.

Zippy, I knew they had a Franklin, TN place and had just gotten a Nashville place when Covid started. I did not know beyond that.

Last week, I made tacos. I know it doesn't fit in this thread but here is how I did it.

I bought tacos, added taco sauce to the top, and squeezed a lime on it. It's nice to make my own tacos.

Here's what i have been making, it's Meathead's Memphis Dust

3/4 cup firmly packed dark brown sugar

3/4 cup white sugar

1/2 cup American paprika (I use smoked paprika)

1/4 cup garlic powder

2 tablespoons ground black pepper

2 tablespoons ground ginger powder

2 tablespoons onion powder

2 teaspoons rosemary powder (hard to find, so i elimimate it)

I add a teaspoon or so of allspice. It just smelled like it belonged.

Notice it contains no salt.

The salt is added before the rub.

Let me clarify, i use the Memphis Dust on pork.

For the brisket, i used the Big Bad Beef Rub with a dry brine the night before.

3 tablespoon coarsely ground black pepper

1 tablespoon granulated white sugar

1 tablespoon onion powder

2 teaspoons mustard powder

2 teaspoons garlic powder

2 teaspoons American chili or ancho powder

1 teaspoon chipotle or cayenne powder

They're pretty good..

Best place I ever ate at in St Louis makes fresh cut fries with those chips ground up, and sprinkled over the top as a seasoning. To go along with a really, really good burger. Dive kinda place.

This is my favorite one. Pretty easy. Just cook it on low and stir every so often for 5 minutes until everything combines.

Carolina BBQ sounds like my kind of BBQ.

Any places in the Chicago area that specialize in it?

Some of the best ribs I've ever had came from a North Carolina BBQ spot in Atlanta. You have no idea how much this hurts me now.
