Omelette with fresh jalapeño and feta. Only have time on the weekends though. A little heat and salt to start the day.

Favorite way Eggs Benedict from Brennan's in New Orleans. I could eat that daily. Eggs on eggs, smothering Canadian bacon and a Holland rusk (English muffin knockoff)

Yeah. I like ketchup and all, but not on eggs. Or hashbrowns for that matter.

Yeah I could eat that 3 meals a day every day but it is way too much work. I had a simple quick eggs Benedict recipe that I lost.

I've had their recipe for 25 years and have made it twice. It is too much work, even if you make too much for two.

Eggs Benedict.

I always forgot at least one.

One of my brothers made this for me a few years ago.

Pretty good.

I make an egg casserole pretty much every weekend for consumption during the week. 8-10 Eggs, tube of browned ground sausage, cup of milk, about 3/4 bag of cheddar cheese and a full cup of jalapenos in an 11 x 17 greased pan. About 30 minutes at 375 degrees and you are done ( sometimes I like it a little more browned so takes a bit longer ). Super easy and quick in the morning. Heats up in microwave like fresh. A little hot sauce and a dollop of sour cream and it's all good man. I think it would qualify as a Frittata

I recently bought a casserole dish and will be trying this.

Nice. Please note that I don’t usually preheat the oven when I throw it in so you may want to start at 25 minutes and then watch it from there if you usually start the oven ahead of time.

My favorite breakfast spot has a Country Burrito- taters, sausage, peppers, onions, etc with eggs in a tortilla covered in country gravy. With their Mexican ketchup-(home-made ketchup-based hot sauce about as hot as I can stand it), I can usually eat the whole thing, but not always.

Most places I judge their breakfast by if they offer Eggs Benedict and how good it is. I have also found I like the version with spinach.

At home, usually make up the omelet fixings and then just add the whole eggs and cook them sunny side up, so I can break the yolks with my toast or muffin and still get the meat/onions/mushroom, etc. when the yolks are gone!

Ketchup on all of it, every time.

At home it’s usually sunny side up or scrambled. I don’t hate ketchup on eggs. Generally will put salsa or pico on it to give it a bit of kick and make me think I’m getting some veggies in.

I find this with spinach in an omelette.

Weekday before work: scrambled with avocado on tortillas
Weekend with more time: scrambled, with chorizo, diced potato, avocado, and quesadillas

For me they have to go over to at least cook the slime off. If not I think I would rather crack a raw egg in my mouth and eat that.
