Goodfellas is a great film that is probably discussed in film schools as often as the Godfather movies. Maybe it would be considered more artistic if it didn't use the word Fuck 321 times. The tracking shot in the Copa is considered one of the greatest shots in cinema. I can't think of a movie that was cut better. The opening was fantastic. The music was perfectly integrated. The casting was perfect right down to Scorsese casting his mom as Tommy's mom.

I'd probably go Godfather first and Goodfellas and Godfather Part II tied for 2nd. If Castellano had returned for Part 2 I might consider it the greatest. What a terrible decision. Pentangeli just didn't carry any weight because I didn't know him. If that was Clemenza it would have been a lot more interesting.

The plan for Godfather 2 was to have Scorsese direct with Coppola producing but the studio wouldn't go for it.

The books are great if you haven't read them.

I think the intent was to have him die thinking Michael double-crossed him. Killing him wasn't enough he wanted him to think he was a fool for being so loyal to Michael.

That was based on a real story...at least the part about the strangulation being interrupted by a cop.

Your post lead me to check out this guy's mob movie reviews. Pretty good. He likes A Bronx Tale a lot too. His review for Donnie Brasco reminds me of my club. Especially the part about the cooking at the 8:00 mark.

One Friday I was doing the cooking and I was making a dish I call braciole picante. Unlike a typical braciole cooked in red gravy and made with flank steak, this dish is made with pork and after being browned whole in a little olive oil the braciole is sliced and fried to a finish in butter and then topped with a little lemon pepper. If it's done properly you get pieces that look like Maurice Lenell pinwheels. I usually serve it with a carbonara-like pasta.

So, I served the dinner and most guys were complimentary. But Ernie the Tailor started bitching. "Dis is-a not braciole! Braciole is-a made wit da flank steak." Tony the Barber who was his closest friend took him aside and told him to shut the fuck up and then he made Ernie resign from the club in disgrace. I told Tony he shouldn't have done that. I didn't give a fuck if Ernie didn't like my food. You don't like it. Order a fucking pizza from Joe's.

Ernie returned for the club bocce championship that fall and we had a good conversation. I never had a beef with the guy. Just some pork that he didn't care for.

That's why he agreed to testify against Michael. He though Michael betrayed him. It was a major plot point.

Italian cuisine is hard to define. Northern Italians make their braciole with different meats Southern goes a little more beefy. I think both are usually in tomato sauce though. It's true for a lot of their dishes, lasagna isn't the same in any region neither is the pasta itself. I used to use flank but have gone more with top round and last time I used cube steaks because they were big and cheap. Nobody in my house cared but we are not Italian. What do you stuff it with?

I've experimented with various things. Once I was buying my flank steak at Ascot Prime Meats and I saw a little package of ground chicken so I put that in my stuffing and it turned out very good. My basic go-to and what I always use for the picante is a mixture of bread crumbs, romano cheese, garlic, pepper, parsley, and olive oil. It's basically the same thing I use for my stuffed oysters.

my MIL is from italy, came over here when she was 7. she can make decent stuff but her specialty, in my opinion, is her braciole. i'll never have it anywhere but her house when we visit. she knows i love it so she usually makes it.

there is very little else that i can stand about her.

One of my biggest disappointments when I moved to New York was that I discovered that Italian Beef didn't actually originate in Italy.

Yeah..no shit, My point is if the cop doesn't walk in and stop the kill then he's dead and doesn't testify or feel betrayed.. The only way it makes sense is IF Roth had the cop go in to stop it..which is obviously absurd.

I put a little sausage in mine usually about 1 link, the rest go in the sauce with the rolls. Sometimes proscuitto and pine nuts the rest is the same as JORR's but cheese doesn't matter and sometimes a little wine. Never never never raisins. Blech.

One of the main differences within Italy is whether they use predominantly butter (northern) or olive oil (southern). Basically comes down to the climate difference....which might also explain the differences in meats.

I'm not brand loyal when it comes to canned tomatoes. I usually grab the ones with the yellow label, I don't even know what they are. There might be "Gold" in the name.

Olive oil is a different story. You have to get the right stuff. Some of these brands like to sneak in sunflower oil and use deception to sell that shit. Sort of like this:

PURE EXTRA VIRGIN OLIVE OIL10%
sunflower oil 90%

Probably red gold. I usually buy something out of the Italian section but I'm still trying to find a good one sometimes I default to hunts.

I like California olive ranch products.

My experience with beef in Italy is that it sucks and we make their beef dishes better than they do. I really didn't like most of their meat, in fact.

hopefully it wasn't horsemeat, many europeans love horsemeat. tons of american horsemeat are shipped to europe every day.

i've found that dairy products are much better (taste and health-wise) in europe, cows/sheep/goats aren't given steroids and/or anti-biotics.

anecdotal conclusion - much less food allergies for euros.
