I've wondered the same thing myself. The only answer I can come up with is they want a true opening day or don't want to piss off the sellout crowd. If there's a rain out on opening day, and they have an off day immediately after opening day, they can just try again on the off day. If they didn't have that off day, the next scheduled game would probably not have the opening day crowd, and all those people who bought opening day tickets would have to come back on some other random day.

That’s 100% the reason. Even the worst/lowest attendance teams in the league get good crowds on opening day, and in many cases, charge more for the tickets. Teams don’t want to piss off the people paying premium prices for opening day.
