Most pastry chefs buy frozen puff pastry. Find the brie you like and wrap it in a puff pastry and bake it. You can put a spread on it if you want before sealing it. Buy the spread or make it totally up to you. Great appetizer because it's cheap and easy. You can do ones more like tartlets too.

So 350 for 30 minutes? I just wrap it and roll with it?
That sounds too easy.

That's pretty much it.

This will be my Saturday. Not tomorrow because I'm on call because I work a shit job because my FATHER! but next Saturday! The next Saturday I'm off and I'm eating brie (maybe some sushi too) and drinking scotch.

What's your scotch of choice? I lived in Scotland and forced myself to drink it before I moved there. Now I love scotch.

So this is where baking is sort of hard...All ovens are different. Puff pastry is a laminated dough typically with no yeast which means you have layers of dough and layers of butter. The butter releases steam while cooking and adds air to the final product. A lot of the bubbles and spongyness in laminated doughs are from the butter releasing water. If the oven is too low the butter will melt before releasing steam and you will have a bit of grease in the pan and more flatness. 1/4 inch rollout for the whole wheel is probably good I might go a little thinner for tarts. you are always looking for GBD or golden brown and delicious.

I have a convection oven. It supposedly converts conventional temps to convection temps. Should I use convection or conventional?

It's not even close. Laphroaig. When I can afford it 18 years. Otherwise 10.

Brie with bacon jam or caramelized onions and figs is a good thing.

What did your dad do to you?

They really do have our best interests at heart. They want you to be happy but not struggle so much. At least mine did. They were right in a lot of ways.

Nice! My "every day" whiskies are Bowmore 12 and Macallan 12. Have some Lagavulin 16 but by this time tomorrow, it will be gone! Have some special ones, too. Limited releases we get discounted prices on due to how much my wife spends on wine at Total Wine. Off the top of my head, don't know what they are but they taste fantastic. They are in the same price range as Laphroaig 18.

Let’s hear it. I got time.

I almost started a thread to debate pegging currency to the US dollar related to cryptocurrency but I bored myself typing out and reading the original post so I gave up on it.

I’ve posted 40k+ times here and I’ve typed out 30k+ posts that I’ve read and then deleted. Not tonight though. You are all dealing with stream of consciousness Dr. Ken.

Well more a (bad) joke setup, but global economic recovery diminishes demand for a safe haven currency, along with inflation, inflation, inflation. Whether the latter has anything to do with every major bill for the past 18 months calling for trillions of dollars in spending, I’ll leave to smarter people than me.

Your idea of pegging a crypto to a fiat currency is intriguing, mostly because I imagine it’ll elicit at least two or three pegging jokes.

I'll certainly get Macallan 12. It's not a bad price at woodmans. Tonight is walker black. it does the job.

you could do either but a good rule of thumb to start with is if using convection decrease temp by 25 degrees and see the time about the same.

Over the past 10ish years I’ve been involved in a business with my dad that involves some travel. Over the past 3 years we have found ourselves driving together on these trips instead of separate vehicles and I wish the conversations we’ve had in my forties were had in my teens. I joked about a job he had at US steel on the floor between his time in nam and going to graduate school that I bet he regretted changing professions after a story of a run in with shop stewards. Told me he tried his best to never regret as it was a head game that could take you to a bad place mentally. He described my adulthood pretty good there. The other was in regards to progressing through life. That it doesn’t matter how fast you get there but that you are moving in the direction of your goal. I’m still pretty sure if I told him that as a teen I’d of gotten a verbal smack at best.

Perhaps retirement has given him more time to think and philosophize but that was not the dad I knew as a kid.

I’d love to see an effort to try and see what creating a peg reserve would do to world economies. I’m like the Joker.

It would be a great case study. We are reserving this seemingly fake currency against this other fake currency. So, we’re all good.

I was ready to declare crypto the mirage of the moment Wed night when it was crashing in real-time by double-digit percents a minute but then stabilized and regained on the losses.

I went into it for shits and grins but it is a real investment now.

But, I’m trying to make some different ones. I literally started doing George Costanza life choices (not Frank).

If I would not have done this before, I am going to do it now. It has had mixed results but at least it is different.

Well fuck. If you’ve made terrible life choices I’d hate to see what the scorecard looks like for me.

I had a new neighbor move in last week. He just told me a few minutes ago he was gonna bring me some homegrown bud. My choices can’t have been all terrible if they led to this.

Teens? Yeah... not much of a teen kinda place honest. It's great for kids (hiking biking kayaking) and drinking fucks like us (wineries cherry picking drinking drinking camping drinking).
Leave the kid with some friends or family or give the kid 100 bucks for pizza money and go with your husband and do weird sex shit in a tent or camper for 5 nights.

Teens? Not too sure. Don’t teens think everything is lame?

My grandparents used to own hundreds of acres up there in the 60s-80s so that was our summer vacation every year until college. I love it there as well. Could do some fishing, either charter on Lake Michigan or on some of the inland lakes. Can do some biking or hiking, there are some pretty good trails in Peninsula State Park.

Went as a young teen. Like 13. Went fishing, bike riding, beach stuff and Tina lot of stores. Think there was a dish boil too. Bought a giant shark kite. My dad almost killed me on accident. Good times.

I’m of the view the current cryptos are investments and that’s about it. They’re not viable currencies (particularly Bitcoin), but are certainly making people rich.

Central bank cryptos are the future. The Fed should already be in the blockchain business.

You are different too and you are receiving the info differently. Teens and parents...ugh, they just want you out of their business and I can't blame them. As a parent it's really hard to show the weakness or failures and maintain a certain amount of authority.

We went to Boston 2 years ago. They really liked that. My husband likes active trips. I like event & food trips. I should ask them what they like more. What did you guys like or what was a good trip/good place to go? I was thinking Savannah or one of the Carolinas next. I'd like to do DC for my daughter but I don't know what's open. NYC or Seattle when it's not a disaster which seems like it will be a few years.

I’m of the view the current cryptos are investments and that’s about it. They’re not viable currencies (particularly Bitcoin), but are certainly making people rich.

Yeah, it's insane. Nobody is paying you in bitcoin. Not really.

I want that Tesla. I'll give you the Jackson Pollock painting for it.

Like now, or after people understand the drip period?

Doesn't matter.

Well, is it at least around the time of the biograpy?

Doesn't matter.
