I reheat fries in the over at 350 for 10 minutes. My family thinks its strange but I think the resurrect fairly well and I'd rather have it then potato chips.


We use the large air fryer we have and many times it is very good.

I eat the philly cheesesteak from Jersey Mike's and am happy to have it (yes, I know Monti's is the real deal and not a huge hike).


They make a legit cheesesteak. But I always tell people, if you’re in Philly, go to Tony Luke’s or some place like that for a cheesesteak. To Nas’s musing on Portillo’s, the quality doesn’t match the line for Geno’s or Pat’s.

The fats are added usually added at the end in a sponge cake and in most regular cakes the fat (oil, butter) are usually combined with the sugar. The mayonnaise just kind of rearranges the process a little bit. The addition of acid will give a foamy or spongy texture because they help produce air.

Chefy chefs hate this type of thing. There is really an art, talent, and science to baking and it bypasses some skills. Most people only care about if they like what you put in front of them. It works. I've thought about cheating like using a mixer when adding flour to a sponge cake because I can't fold for shit. Mayonnaise in cake became popular in the 30s and 50s when ingredients were scarce or expensive.

That makes sense. I think mayo is gross, but in a chocolate cake, there's no way of knowing it's there.

I picked up a Big Beef today for lunch. I couldn't have been happier with it.

Good portion and the sandwich was covered with sweet green peppers. Delicious!

The stock is up today but down more than 5% since I made the original post. It's now $9 and change.

Maybe it’s an AZ thing but I doubt it — their sweet peppers aren’t that sweet. They need more brown sugar. The peppers are also too crunchy.
