Any meat (i'd go beef) topped with chopped or ribboned asparagus, shallots fried or sauteed, prosciutto, parm cheese, and if you want you can add a hollandaise or Béarnaise sauce. Havarti or mayo would work too and less work. Add a lettuce if you want too.

This almost sounds like it would pair perfectly with Lite the Lamp Brewing's Squishee #2...it's a sour brewed with blackberry, raspberry, and lactose...and named after the beloved Simpson's Quik-e-mart beverage...

Bummer. I would have tried that. Peanut butter and Dorito sandwiches were a staple of mine as a kid and I've had a PB Burger before which was pretty good and everything goes with bacon.

Prosciutto is good on paper, it kind of gets lost in a pub burger, already a lot of fat and salt going on.

Thinking about doing more of a Cinco de Mayo homage, actually, Beni. I have a guy who has good chorizo in casing. Was going to cut that on the bias into coins, sear them on the flat top, put those on a burger with Chihuahua cheese, a homemade salsa verde, and maybe some crema, maybe a little cotija, and cilantro. What do you think?
