Marinade in Lime, Coriander, Cumin, Garlic, and pepper overnight. Do not be shy on the Coriander...the more the better.
Cook meat whole and cut into strip AFTER cooking.

I'm sure there are better options, but that's my ghetto method.

Get the meat at a mexican grocery and have them trim and place it through the machine to tenderize.
