Okay. Pam and Franks on Archer/Harlem. Not strictly a butcher shop.It is a Polish Supermarket but they do everything in house. Very ,very good sausages. Other meats are decent.
There is another one right near Midway that I can not remember the name to right now. They are very well known for there hotdogs. They do a veal one that is killer. The rest of the place is meat lovers heaven.Had good steaks from there.

Paulina Meat Market.

Everything is great and the butchers are great, but I still wish they moved just a little bit faster, If more 8 people in the place I usually leave as I know this will take 20-30 minutes of waiting.

$$$$

Yeah, Paulina is a good shop, but they're not very friendly. It's not that they're rude, they're just very brusque and matter-of-fact. I like my guys Vince and Bob at Devon Avenue Meats in Park Ridge too.

The Paulina market is good. I get there 1-2x per year or more if I can.

The hipsters all go to Butcher & Larder. So, what is your favorite thing there?

Unless it's changed recently I believe that's "Joe & Franks". You're right about the sausage...top notch.

Where in the burbs are you from? There are a lot of great meat markets if you know where to look...and this board is a great source for that sort of thing. :alien:

I mentioned this before but just south of downtown Naperville on Washington is Casey's. They have a great meat counter.

Wheaton Meat Company in Wheaton is fantastic. I have been a customer there for years.

There are a couple in Lincoln Square right in the square that look pretty good. One is on the south end. It changed hands recently after being run by a family for 50+ years. The other is next to the Brauhaus. It looks good but I have never been.

I do not go to butcher's for my meat...

I believe Chas is referring to Gilmart at 5050 S. Archer.

I go to a farm in Wisconsin and choose my cow...meet the cow family, taste the generational milk, investigate the wedge-shaped rump, high quality well attached udder, front teat placement and strong suspensory ligament, etc...

basic stuff.

I read this in the voice of Barry White.

It's disgusting. And hot.

Costco has excellent quality steaks (you can often find prime-grade there) for unbeatable prices. The only problem I've found is that sometimes steaks within the same package are not of uniform thickness.

As for real butchers, I'll second Casey's in Naperville.

Another vote for Costco.

And for a butcher in the burbs there is Heybecks.
