1 small yellow onion, diced
4-6 cloves garlic, minced
1 (16 ounce) can San Marzano tomatoes (diced)
1 (6.5 ounce) can tomato sauce
1/2 cup kalamata olives, pitted and sliced
2 tablespoons balsamic vinegar (the older the better)
salt and pepper to taste
1 tablespoon capers, chopped (good if you have em, if you are IMUing it then skip it)
crushed red pepper to taste (if you like)
crumbled Feta or grated Parmesan Cheese

In a skillet, cook onion in a little olive oil over medium-high heat until translucent. Stir in garlic, and cook for about a minute. Add tomatoes, tomato sauce, olives, vinegar, salt, pepper, and crushed red pepper and capers (if using). Reduce heat, cover, and simmer for a minimum of 30 minutes, or up to 2 hours, time permitting. Serve over pasta and top with crumbled feta or grated Parmesan cheese. Goes well with fish or chicken.
