I dunno. They have to have been made within a few hours. After that they taste like dish sponges.

Delightful Pastries on Lawrence in Jefferson Park is fantastic.

Bennison's in Evanston makes some very nice strawberry-and-cream paczki. The rest are uneven.

suprisingly enough I really like a german bakery on touhy in skokie called schlegel's. I make it for the opening bell on Mardi Gras because it gets packed soon after.

The true Paczki Day is this Thursday. I'm not really sure why. The Anglicized version is mardi gras.

I don't like traditional paczki. I get it with custard or chocolate. The closest I get to traditional is strawberry and whipped cream.

The French would disagree.

I tried three Paczki varieties from Bennison's (Davis Street, Evanston) yesterday--cream cheese, banana cream, and strawberry cream. All three were outstanding. Bennison's has significantly improved the quality of its paczki over the past 2-3 years. The dough is lighter and crisper, and the various fillings pop with more flavor. This isn't the best spot in the area for paczki, but it's very good.

I had some kolacky from Jarosch around the holidays and I wasn't impressed at all. If you can't hit minor-league pitching...

I gotta say...I'm Polish, but there's an awful lot of bad Polish baked goods out there. 95% of it.

If you go to any bakery you need to order ahead if you want chocolate donuts on Fat Tuesday or the day before.

I was never really a fan of his jokes, but I always thought he did some solid impersonations.

I thought he was talking about fish!

Atlantic pollock is largely considered to be a whitefish. Traditionally a popular source of food in some countries, such as Norway, in the United Kingdom it has previously been largely consumed as a cheaper and versatile alternative to cod and haddock in the West Country, elsewhere being known mostly for its traditional use as "Pollack for puss / coley for the cat." However, in recent years pollock has become more popular due to over-fishing of cod and haddock. It can now be found in most supermarkets as fresh fillets or prepared freezer items. For example, when minced, it is the primary component of fish fingers and popcorn fish.

It is often the common ingredient used to create imitation crab meat.

A guy walks into a bar, sits down and orders a beer. He says to the bartender, "Hey, want to hear a good Polack joke?"

The bartender says, "Tell you what.... I'm Polish. See those two big guys playing pool? They're Polish. See those other two guys sitting at the end of the bar? They're Polish. You still want to tell your "Polack" joke?"

The man replies, "Not if I'm gonna have to explain it five fucking times."
