Yes, Honey1 is guilty of overcooking meat, especially when the backup pitmasters are minding the smoker. As many have stated on this site in the past, Honey1 can be infuriatingly inconsistent. Sometimes it's great, sometimes it's average or worse.

By the way, Honey1 does not "steam" its meats. It smokes them. Water is integral to this process. Do you not use water when you smoke meat?

I dont use water, because of the steam. I tried it with the water pan, but just no reason to have it. Water pan is essentially a grease pan now.

IF, we were still talking about this place for its great BBQ, that'd be a plus in my book. There is nothing more disturbing about a squeaky clean place selling even passable BBQ. That's unpossible.

One, I stopped making ribs years ago. Rib tips are far, far better (& cheaper) on so many levels than ribs. In my book, ribs are a comparative waste of time, effort and money. And two, yes, if it added to the flavor....well, maybe.

I'll stick to my guns on this one (rat crap aside). ANY BBQ joint worth a damn should almost never pass a city of Chicago Health Inspection with flying colors. Maybe, just maybe after reopening after a long vacation, buts that about it. Of course, in my experience the Q coming off the pits isn't up to form for at least a week after reopening.

Those inspections are supposed to be almost as ridiculously stringent (for BBQ joints) as fully meeting the Chicago Building Code is for any property (and which is virtually impossible). And I'm sure they similarly require substantial amounts of cash on hand to steady the inspector.

Dont think the cash is exchanged so much, but they are assholes and I would guess if you looked hard enough you will find rat crap in 90% of the places in the city

Thinking back to my landlord days, you're right. It wasn't cash from me, my properties' marked up violations were never serious, but damn if there weren't a couple of guys who wanted nice lunches. :lol: :lol: :lol:

Alice's BBQ six blocks to the west will kill anything that wildly overrated joint will put out. And twice on a busy weekend. I may be more inclined now to try the Leon's BBQ on 45th & Archer before giving his overrated garbage a third try.

Even the new Uncle John's on 83rd & Cottage has finally stepped up their game to meet the old boss' game.

Mr. Adams just realizes that the Dept. of Health, old age of real masters and a chicken shit second generation is an opportunity. And he's close enough to "safely" serve Hyde Parkers now that Ribs N Bibs is long gone.

Actually last summer/fall I thought the new Honey 1's was ok. Not great, but ok. Maybe the seasoning of the pits have improved the product, I may have to try it out again. :)

Gonna have to give this place another try and have the burger. Was at this place the week it opened and it was pretty bad, but I've heard its improved since.

Another burger I need to try is from "Bread and Wine" on Iriving Park. Fancy place, but supposed to have an amazing burger.

I think it's an old dry cleaners. I've met the owners, they're really cool. Being off the beaten path gives them a little freedom to experiment, like Parachute, without that 12 grand Southport rent hanging over their head.

I just moved to a new office right around the corner. I don't know when it's open. It doesn't seem to be open for lunch. But I will say Maya Riviera makes an exceptional taco. Make sure you spend the extra 50 cents for the homemade tortilla.

highly considered doing something like that at one time....in terms of an isolated location...was thinking more of Elston and Belmont at that time and then let the neighborhood fill in around me.

It was a "Washing Well" at one time....

Have had friends go....I think its like an urban adventure now...lol...ALL THE WAY DOWN ON IRVING WE WENT....and SURVIVED!!!!!!!

Side Note: JORR will love this, Theos power has no bounds getting a crew into Scottsdales top culinary establishment, usually a month before a table available...Theo made a call...table for 8!
