Pretty sure it was. Actually needed a SMALL RUN place to make his stuff. Then with the small runs, had to be local for delivery fresh. he used to use a guy in Roscoe Village when he first started. Would see him in. Dont remember the name of the place but it was authentic enough that they took the summer off! THATS OLD SCHOOL

The “Champ Summers” is a spicy Vienna Polish sausage served with Goose Island beer mustard and crispy fried onions. The “Pete LaCock” is a ribeye steak sausage with horseradish cream and blue cheese. The “Bill Bonham” is an atomic pork sausage with cherry marmalade and smoked gouda cheese

We went to Piece and got a "Hot Doug's Atomic Pizza" yesterday.
It was good, not great. The problem is that the sausage on it tastes/feels like breakfast sausage.
The other pizza we got (sautéed mushrooms/banana peppers/onions) was better than the Atomic.

As I have done a ton of bar/tavern/restaurant deals, guys usually dont have the startup capital they need. They underestimate the mechanical costs, because they dont know how much that costs to fix or get working or replace. They have the cheesy pictures, paint and benches ready to go because they have a best friend or brother in law who is a contractor in a van who will do it for cheap...ughhh....

To get an insurance company to build you a new facility is like running a mile, with the first 1/2 mile already done for you....and I know some would still not be able to complete it.

I cant tell you how many knuckleheads I have met with "concepts" they think are going to be huge....and I wouldnt trust these guys to paint a door!

Hot Doug's Taking Over Publican Quality Meats For First Full-Fledged Popup
Mark your calendars for Jan. 18.

Doug Sohn has found something to occupy himself during Chicago's winter while he waits for pitchers and catchers to report for his beloved Cubs. On Jan. 18 he'll host the first full-fledged Hot Doug's restaurant popup at another renowned sausage-making restaurant—Publican Quality Meats.

There won't be any reservations or tickets, true to the Hot Doug's philosophy. He'll offer an a la carte menu of six to eight encased meats—along with duck fat fries. Like those beloved wistful days in Avondale, it's first come, first serve. Marz Community Brewing will also supply the beer for the special event. Down the street on Fulton Market, The Publican will offer a full bar and a limited food menu to help address potential overflow from the surely long lines at PQM.

Though Sohn has served sausages at other locations, including Wrigley Field and hungry guests on the summer festival circuit, he's never hosted a full-fledged popup. Paulina Meat Market didn't count. Hot Doug's closed in October 2014, and although two of his cooks opened Hot "G" Dog, copying some of Sohn's offerings, fans continue to crave those original specialties unique to Hot Doug's.

:lol: It's not that they crave the original specialties. They're not unique at all and you can still get them at Hot "G", made by the same fucking dudes that made them at Hot Doug's with the same products they used over there. People crave interaction with this goofy motherfucker. I'm not really sure why. He's about as sincere as Bill Murray's lounge singer. It's truly a cult of personality.

He's a sharp marketeer, I'll give him that much. His business model worked for him. The line that I refused to stand in was part of the mystique. The Fatso's guys opened a place in Doug's space with a product that was as good or better and they couldn't make it there. Doug's existed for the convenience and glorification of Doug, not to actually serve customers. I don't patronize places like that. But I do respect Doug for pulling it off. Most people can't get away with it. Many have tried and they often had better and more unique products than Doug ever did. It takes a certain personality.

Back in November Mike Sula wrote a review of Cantina 1910 (great place and the owner/chef is a cute chick who is super cool and says "fuck" a lot) wherein he suggested that Andersonville would not support a certain high level of dining and he cited Pasticceria Natalina and Great Lakes Pizza as examples of places that failed. I felt compelled to write to him and point out that Natalie Zarzour of Natalina and the douchebag that ran Great Lakes tried to do that thing where they run a restaurant on their own terms and fuck you if you don't like it. That's great if you can get away with it. But it takes a certain type of person, e.g. the obsequious phony Doug or the crusty but lovable Burt of Burt's Pizza. (And some LTH hype doesn't hurt either.) Natalie is a goof and the Great Lakes guy is possibly the biggest Caller Bob I've ever met in my life.
