I was amazed to discover this by accident one summer day. I'd eat more hanger steak, but it's not really something that you can find on the south side too often. Unless I'm in the West Loop, I almost never come across it.

As I get older, I enjoy eating turkey at Thanksgiving dinner less. This recipe is fantastic. There is so much flavor, you almost think it's beef.

I tried steak tartare once and it was really spectacular. I was pretty sauced at some high-end restaurant in Jackson MS. Doubt I would have tried it otherwise.

I shun meatloaf, but that quinoa/turkey combo sounds intriguing.

Yeah, I think it's a French cut of beef, but it does seem to be becoming more popular in the U.S.

When I ate a lot of steak, it was always well done. If the waiter gives me a hard time, I would just tell him "as close to well done as you can without ruining it".

Alas, I prefer weighing less and having an acceptable cholesterol level, so red meat is out of my diet. I don't miss it.

For 35 years I ordered steak well done. Maybe 5 years ago I went down to medium well. At some real steak places I even risked medium, but it really didn't taste any better.
