BBQ Competition.

Long overdue. Free food.

Somebody handle the details. I'm just an idea guy.

I'm a rookie on the " BBQ circuit" ..I built a homemade smoker but I been picking up alot of tips from TV chefs...the injectors and apple juice have vaulted me into " pretty decent" territory.

Pork shoulder is the easiest thing in the world to smoke and have people think you are great. Guess what? You only need to smoke it for about two hours and you can finish it in the household oven! True pitmasters hate this one secret tip! You don't even have to brine it because it is so fatty.

Best two things to smoke in my opinion: a whole chicken, split down the spine. Smoke it and then finish under a broiler to crisp up the skin. The other is meatloaf. If you have never had smoked meatloaf before, you should do it this weekend. You will kick yourself for not having done it before. It is amazingly good.

Smoked meatloaf in a bacon weave.

People will think you know what you're doing and, yet, it's very easy.

Would it be everyone cooking the same thing in the same amount of time or more of a pot luck where everyone shows up with their finest dish?

pretty much. i know a guy who doesn't season it at all, just slathers it in mustard smokes for 4 hours and then oven cooks it the rest of the way. he sells it to his friends and family on facebook and they all think its the greatest thing in the world. we laugh about it.

shoulder can be cooked at 225 at 325, not injected or wrapped, and come out amazing. just have to pull it when its actually done.

Amazing concept, thought about. Logistics are tough!

Went to semi informal rib contest, they have each year up in kenosha , about 20 people making ribs, 200 people there, brought 25 slabs, the whole smoker, was quite an effort and full day event. Not a "Hey, I have to take my kids to soccer practice then stop at starbucks, then get some ribs....then I can be there event"

Leave 8 AM
10 Am arrival

11 AM setup
Fire lit

1 PM Coals ready
rib on
4-5 PM slabs ready

Had to have the table ready, cutting board out, plates, sauce, napkins slicing ribs off the rack.

Veteran move of course was having having some suaseeeges on the smoker that take an hour, slice those up, got the fans expecting more and knowing they will come back for the voting process.

Yes, won best rib in that small circle of people that didnt have a clue. Best sauce went to the girl who made some Blueberry BBQ sauce. Many here have had my ribs, didnt bring the smoker out, made them the day before and warmed them.

So, while it has HUGE potential quite a committment.

Always remember, Favrefan backed out of a chicken McNugget eating contest, imagine trying to get 5 guys to bring smokers and various meats to a central location.

I say start with the taco bell taco eating contest and work your way up.

How heavy is the tri-tip you typically smoke?

pretty small....usually ~3lbs
usually just smoke it for a few hours then finish over direct heat, a reverse sear i suppose
i've really only seen it at whole foods though and they don't always have it, do you know of other places that carry it ?

Oddly enough, I've found Tri-tip at Super Target of all places.

I've seen it at Mariano's, too.
