So we're playing around with this burger today. The pulled pork is obviously already fully cooked. I made the sauce, the base of it is apple cider vinegar, plus some other stuff, but it is, for all intents and purposes, watery, and I don't really want to get into a reduction. But we have to heat up the pork a little before serving it. My chef Ismael comes up with this idea - Throw the pork on the flat top under a cloche, give it a spray of the sauce, and let it it steam it a little bit.
