Looking for something simple, scale-able, and relatively shelf-stable, so not a lot of cream cheese, sour cream etc. Does anybody have a go-to recipe?

I'm trying to figure out why baking soda give spread to cookies and powder gives lift.

I've made them from scratch just using the instructions on one of those Ghirardelli chocolate bar wrappers and they're amazing.

I've got a great recipe.

Step 1: Preheat oven to 350 and stick your head in it for 30 minutes.
