It is literally impossible to throw a frozen chicken breast in the deep fryer and cook to corporate safety standards and it not be dry unless it has been pumped full of some sort of chemical brine.

This is generally true (I don't know about the chemicals, but saline/brine for sure,) and I have no doubt this product comes in frozen. There is a version of commercial chicken breast that is precooked and frozen, but I think the end result of that is pretty dry too.

They definitely are marinating or brining the chicken, as I've had a few now that were over an inch thick in parts, and were not at all dry, yet not mushy or underdone either.

both of mine have been that is for sure. not typical breast meat at all. but Popeyes breast pieces are the only fried chicken breasts i like because those are like that too.
