So I'm kicking around a burger with roasted red pepper hummus (which I have a good recipe for) and, rather than a the obvious tahini, a harissa mayo or cream sauce. Thinking of adding carmelized onions, don't think I need a cheese per se. Buns already have sesame seeds, which is a plus. Wondering if a.) I need a crunchy or verdant component and b.) scrapping the hummus for babaganoush, which I have not made before but would taste pretty darn good I imagine. Thoughts?

You can. I would't though, unless you have a dedicated fryer. You'll mess up the oil.
