In on the anti-mushroom band wagon.

It would crack me up with people would order an extreme thin pizza with extra mushrooms. I'd try to make them come to their senses and either go regular thin at the minimum or back off the mushrooms... That's like eating a sponge with all the moisture they hold when cooked.

Maybe with canned but fresh mushrooms don't add or hold moisture. They are drier than the onions plus no grease factor like you get from pepperoni and sausage.

Our mushrooms were fresh from Greco. Not canned. They were kept in a cooler until needed and then in the assembly line (which is a cooler), until put on a pizza. In a cooler, they absorb moisture. So when you cook them in a 450* oven, that moisture comes out. So extra mushrooms on an extreme thin crust, results in a sponge.
